A couple different fish marinades

Marinade #1.

Moore's Teryaki marinade
olive oil
old bay seasoning
black pepper
minced garlic
maple syrup

Marinade #2.

diced red onion
walkers jerk seasoning
old bay seasoning
rice vinegar
olive oli
honey

no I didn't give any amounts on purpose, first of all I don't really use them and it depends on what your taste is, and how much your making, and what kind of fish, and how you're going to cook it. Have fun experimenting.

Ground nut stew

This one is for Sister Ahkinyala who always asks about this recipe.
There are alot of different ways to make this and a lot of different ingredients. I usually make this with chicken just because I live with a bunch of candy as......, never mind. O.K. so if you eat beef or pork you can try those meats also, let me know how it tastes I forget. This can also be a very hearty and rich vegetable stew if you take your time and use fresh vegetables, or it can be a quick out of the can or frozen veggie kind of dish.

You start this off like a traditional stew, browning the meat adding water or broth with the veggies
(potatoes, carrots, onion, cabbage, corn, etc.) and cooking slowly until everything is done. Then I add a good amount of extra-crunchy peanut butter at the end. If you like hot food don't forget the crushed red pepper. This is really great served over rice or just by itself. You can cut the vegies and meat small or make it chunky depending on you tastes and cooking time.

Hot Fish salad

O.K. give me a chance to explain. Have you ever had a really good steak salad? Vegetarians, please give me a moment I'll get right back to you. Well a really good steak salad includes, salad greens, fries and cheese and steak. Now back to the non-meat eaters this is a great salad like that, but made with fish.

one orange roughy fillet per person
salad greens and or iceberg lettuce
whatever form of fried potatoes you like
no cheese (unless you insist)
sliced red onion
chopped olives
red wine vinegar
balsalmic vinegar
olive oil (evoo)
margarine or butter

brown fish fillets on both sides in a little butter or margarine, adding the onion when you turn the fish over the first time. Add olives and vinegars just before fish is done so they will be warm and flavor the fish some but not burnt. Add olive oil to pan just before serving so it doesn't cook just warm, and make sure everything is mixed together. Serve fish on top of fries and salad greens using the sauce as the dressing for the salad. This can also be a little lighter by omitting the fries.

Ground turkey picadillo

Alright folks I'm not Cuban so don't get your noses out of joint over this recipe.

chopped onion
chopped green peppers
either whole (with pit) olives or chopped pitted olives, I prefer whole.
ground turkey
minced garlic
cumin
chili powder, and or taco seasoning packet
crushed red pepper
a little sugar
can of tomato sauce and a can of stewed tomatoes
canola oil, or something else that won't hasten death upon you.

brown ground turkey in the oil with the onion, green pepper, and garlic.
add enough tomato sauce to cover everything without it being too soupy.
add seasonings to taste
add can of stewed tomatoes or chopped tomatoes
I like to add the olives last so they aren't cooked too much.

Aunt Little Rose's macaroni and cheese

Aunt Little Rose showed me how to make macaroni and cheese. I'm not sure it was a conscious thing, it was probably from me watching her in the kitchen. I think I've been hungry all of my life.

She used milk, an egg, salt and pepper, and 'Cracker Barrel' sharp cheddar cheese.
Of course with me being 'so smart' and 'gourmet' I've added things like Parmesan cheese and stewed tomatoes; even onions sometime. But this is the basic recipe:

cooked macaroni

combine whole milk, one egg, and salt and pepper to taste, then mix well and pour over cooked macaroni as a binder. Add cut up cubes of sharp cheddar cheese.

Bake in the oven until you just can't stand the aroma anymore!!!

I know you want more specifics about how this is done, that just means you haven't been in the kitchen long enough. Take your time it'll come.

Black Bean Chili

This recipe is for serious cooks only, ready!

one pound dry black beans, sorted, washed in water and vinegar, soak over night covered in fresh water only, drain off all water the next day it will be blue/black.

one large onion chopped
one large bell pepper seeded and chopped
five or six large bay leaves
enough chopped garlic to choke a horse(I like garlic)
some olive oil, and some toasted sesame oil(smokey flavor)
add seasonings to your liking: brown sugar, red pepper, black pepper, seasoning salt, celery seed, chili powder.

put all of this in a very large pot with the beans and add fresh water to cover all. bring to a boil and then turn fire down low and cover pot. let this cook for two and a half hours or until beans are tender. after beans are done saute' your meat(turkey, beef, etc.) with a little oil and onion and more chili seasonings. add a can or two of corn, and some stewed tomatoes then add beans from pot along with some of the liquid. crush some of the beans to thicken the chili and adjust the seasonings to taste. Of course with these dishes they are even better the next day.

Great taco salad

This can be for a few people or the thundering herd just increase amounts.

two cans of black beans
two cans of mexicorn
large jar of salsa
one pound of ground beef or turkey
chopped onion/medium
chopped green pepper
one package of taco seasoning
two cups grated cheese
tortilla chips or flour tortillas
a little veggie oil

saute' the ground beef/turkey with the onion and green pepper, drain beans and rinse once with water to remove extra sodium, drain again and add to meat. Add corn, salsa, and seasoning mix. Add cheese last after everything is done. Serve over green salad with tortilla chips or flour tortillas. This is even better the next day if there's anything left.

Sloppy Joes

Hey this is a quick and easy thing. Ground turkey, olive oil, relish, chopped onion, grated carrot, garlic, Ms. Dash seasoning, provolone cheese, sandwich bread of your choice.


coat pan with olive oil
Chop one medium onion
about a pound of ground turkey
one table spoon or so of relish
grate one carrot into pan
add garlic and Ms. Dash seasoning
add provolone cheese at the end when everything is done.
Serve on toasted buns
